So we tried a new recipe out for the first time in ages. It was a one pot tray meal from BBC Good Food, which was super easy to make. Literally cut everything up, put it in a tray, pop in the oven, wait a little while then add in some chicken, then in the oven again and it’s done.
Super quick and super easy. Lockdown life has sure made us lazy! But I do love a good one pot meal and I’ve always liked ratatouille. Tasty, though can get a little watery. Not so filling without any carbs, but you can easily cook some carbs on the side. Definitely recommend.
