Spinach and Feta Pie

So I made pie a while ago. First time ever. Tasted all right, the hubby loved it.

The recipe called for me to boil potatoes, peel them, and then cut them. Naive as I was, I did it. Took an age, and hurt my hands. Who does it in that order anyway? Next time, think I’ll just peel, cut, then boil the potatoes.

This was the first time I used filo pastry, didn’t know I had to take it out of the fridge for 30 minutes before use. Found that out the hard way.

But hey, this was the first time I made pie. It tasted ok at first. When I reheated it the next day it was lovely. Think the feta cheese didn’t fully melt the first time round.

Would I make it again? Maybe. Would I make it the same way? Definitely not!
