Christmas Cookies

So I had two left over eggs from a couple of English Breakfasts I made last week. What to do with leftover eggs? Bake!

As it’s Christmas, I decided to go for something festive: Christmas Cookies.

I doubled the recipe’s quantity because I had two eggs not one. I had to place the dough in the fridge for an hour to firm up, and I guess it was firmer when I took it out of the fridge, but not quite sure why the recipe called for the dough to be firm…?

Didn’t have any festive cookie cutters so people will have to make do with my “awesome” decoration skills. I put the batch in the oven a bit longer than needed so some cookies came out a bit burnt and crunchy but they taste pretty good. Not the best biscuits I’ve made, but definitely the most festive.
